Sweet and Spicy Acorn Squash
Acorn squash -not just a fall table decoration!

So what even is acorn squash? If you are unfamiliar with acorn squash, it has a sweet and nutty flavour and is rich in antioxidants (carotenoids). Acorn squash is also a good source of vitamin C, B vitamins and fiber.

These are good as a snack or added to soups, curries or bowls.
Acorn squash can be difficult to cut, especially if you don't have a fancy knife set! Try microwaving the squash for 3-5 minutes to soften it up so that it's easier to slice.

Ingredients:

1 Acorn Squash

1 tbsp Olive Oil
-
1 tsp Garlic Powder
-
1 tsp Chili Powder
-
2 tsp Agave Syrup or Honey
-
1tsp Sriracha
-
Salt and Pepper to taste
Equipment:

Large knife
-
Sheet Pan
-
Parchment Paper
-
Cutting Board
-
Measuring Spoons

Small mixing bowl

Process:

Preheat the oven to 400F.

Cut the squash in halves, then quarters. Cut into 1/2 inch thick slices.

Line sheet pan with parchment paper and place squash slices on sheet pan.

Mix together olive oil, garlic powder, chili powder, agave/honey and sriracha in a bowl.

Spread the mixture on the squash slices.

Bake for 20-25 minutes.

Enjoy immediately or later!
