Spiced Roasted Chickpeas

For those who love to snack!

Roasted chickpeas are great on their own as a snack or as a garnish on soups, salads or bowls. These are roasted at a higher temperature for longer to avoid that gross soggy and slimy texture, making them an easy go-to snack for those late night or mid afternoon salty cravings.

A great source of plant-based protein and fiber, as well as iron and folate.

Ingredients:

  • 1 can Chickpeas

  • 2 tsp Olive Oil

  • 1 tsp Crushed Chili Flakes

  • 1 tsp Garlic Powder

  • 1 tsp Cumin

  • Salt and Pepper, to taste

Equipment:

  • Sheet Pan

  • Parchment Paper

  • Measuring Spoons

  • Tupperware or Tin for storage

 

Process:

  1. Preheat oven to 425F.

  2. Rinse and drain chickpeas and spread on parchment paper lined sheet pan. Pat dry.

  3. Drizzle olive oil on the chickpeas. Make sure all are coated.

  4. Sprinkle chili flakes, garlic powder, cumin and salt and pepper on chickpeas.

  5. Bake for 30-40 minutes, until chickpeas are crispy. Watch your oven closely towards the end as timing will depend on the heat of your oven.

  6. Let cool and then enjoy immediately or store in tupperware or tin for later!
