Roasted Garlic Hummus
Hummus is such versatile spread and is therefore a staple in my fridge. It's a great snack with veggies, pita, crackers, great to serve with eggs for brunch or to add to a hearty bowl for lunch or dinner. Homemade hummus is a game changer and you'll never look at the grocery store hummus the same way after this.

Ingredients:

1 can Chickpeas
-
1/2 cup Tahini (I like Nuts To You Nut Butter's Organic Fair Trade Sesame Tahini)
-
1 tbsp Olive Oil, plus extra for garnish and roasting garlic

1/4 cup Lemon Juice
-
2 tbsp of Ice Water
-
1 head Garlic
-
1/2 tsp Cumin
-
1/2 tsp Salt
-
1/2 tsp Pepper

Garnish options:

Olive Oil
-
Crushed Red Pepper
-
Paprika
-
Dill

Equipment:

Small pan
-
Aluminum foil
-
Blender
-
Tupperware/Container for storage
Process:
-
Preheat oven to 400F.

Remove outer layers of garlic husk and cut off the top of the garlic clove.

Place garlic on pan and drizzle olive oil over garlic cloves, then cover/wrap the garlic with aluminum foil.

Roast garlic in the oven for 30-40 minutes until garlic feels soft to press.

Remove husks of the garlic cloves.

Place half the garlic head, chickpeas, tahini, olive oil, lemon juice, water, cumin, salt and pepper in blender and blend on highest setting.

If mixture is too thick add another tablespoon or so of water.

Place mixture in Tupperware/container. Make a well in the center of the mixture and add in the rest of the roasted garlic, olive oil and any extra garnishes.
