Lemon Basil Salmon

A simple but fresh and delicious menu! 

 

An easy weekly go-to that can be paired with a basic arugula salad with balsamic vinegar and olive oil for a light lunch, or lemon and garlic pan fried broccolini and wild rice cooked in chicken/vegetable broth for a simple summer dinner.

Salmon can be pricey, so this menu works with a frozen salmon filet, for a tender and juicy salmon with no fishy freezer-burnt aftertaste.

Ingredients:

  • Salmon filet (can use frozen if fresh isn't readily available)

  • 1-2 tsp Olive Oil

  • 1 Lemon, sliced

  • 1 bunch of Fresh Basil

  • 1/4 tsp of Salt and Pepper

 

Equipment:

  • Sheet pan

  • Parchment paper

  • Knife, for slicing lemon

  • Measuring spoons

  • Spatula

 

Process:

  1. Preheat oven to 400F. 

  2. Lay out salmon on parchment paper on sheet pan.

  3. Rub olive oil on salmon and season with salt and pepper.

  4. Layer basil leaves and lemon slices on top of the salmon.

  5. Bake in oven for 15-20 minutes depending on size of salmon filet.

  6. Enjoy immediately! Store leftovers for next day lunch or dinner.
